I’m Simrin, the creator of The Tuesday Glow!
A blog dedicated to share my experience as a vegetarian, from easy and healthy vegetarian recipes to my personal travel experiences and wellness journey. Over the years, I’ve grown to love creating meals which are not only plant-based and nourishing but also simple and satisfying. I have found a love for creating easy and healthy vegetarian recipes.
I wasn’t always passionate about cooking. But after being diagnosed with hypothyroidism at 14 and put on medication without much guidance, I started listening to my body and exploring how my diet and food impacts my hormones, mood, and my body’s ability to function.
At the start of my cooking journey, it was tough to find vegetarian recipes which were healthy, supportive of my body, actually tasted good and most importantly easy to make. But I learned, and if I can, so can you! My hope is that The Tuesday Glow inspires you to explore delicious, simple, and easy vegetarian cooking and feel good doing it!

Growing up South Asian and vegetarian I never felt out of place with my food, but it wasn’t until I started exploring my food options outside South Asian cuisine or even outside my house I realized how limited it could really be. So, it was time to get creative!
Luckily with the rise of plant-based eating meals in the past years, being vegetarian is easier and more exciting than ever. My mission is to make vegetarian cooking simple, healthy, and delicious!
Beyond just cooking, I love exploring Toronto’s food scene, trying new spots, and traveling and trying vegetarian eats around the world.

That’s what The Tuesday Glow is all about: sharing honest restaurant reviews, helpful travel & food guides, and making the vegetarian lifestyle feel effortless and fun.
Why “The Tuesday Glow”?
I want to wake up every day filled with energy, optimism for the new day and a love for life. I want to glow everyday!
For me, The Tuesday Glow is more than just a blog about food and travel, it’s about embracing joy and finding light in the everyday moments. Not just on the big days, like a vacation or a fun night out, but on the ordinary ones too.
I want to find happiness on the most boring of days. The simple moments. The days you wake up and do your routine, when you have a warm cup of your favourite drink or when you smile at a neighbour. Those are the simple joys we often take for granted, but these little moments make up who we are.
My goal is to help you find that inner glow. Because when you glow from within, every day has the potential to shine. Find your inner glow and carry it with you everyday!
